In the Kitchen: Simple Holiday Cocktails

Cranberry Mistletoe Margarita

Details

Prep Time: 15 Minutes
Serves: 6 cocktails

Ingredients

Margaritas

  • 2 cups silver tequila
  • 2 cups frozen cranberries, thawed
  • Homemade rosemary simple syrup (recipe below)
  • ~6 limes for lime juice (save one of the squeezed limes for rimming the glasses)
  • 2 liter club soda
  • Salt, for rimming the glasses

Rosemary Simple Syrup

  • 2 cups water
  • 1 cup granulated sugar
  • 6 small stems of rosemary – about 1/2 ounce/ 14 grams

Sugared Garnishes

  • Cranberries (3 per glass)
  • Rosemary – (1 small twig per glass)
  • Rosemary simple syrup
  • Sugar

Directions

  1. Muddle 2 cups of cranberries, add to a large pitcher or bowl.
  2. Add in 2 cups of silver tequila, mix until tequila is pink.
  3. Pour some salt onto a plate. Run a cut lime around the rim of a glass. Dip the rim into the salt then set the glass aside.
  4. Make the rosemary simple syrup. Bring the water, sugar, and rosemary to a boil in a small pot over high heat. Reduce the heat to medium and simmer for 5 minutes. Set aside to cool then strain the rosemary from the syrup.
  5. In a shaker filled with ice, add 3 shots of the tequila & cranberry mix, a shot of the simple syrup, lime juice to taste. Mix and serve over ice in a glass. Top with club soda. Repeat for up to ~6 servings.
  6. Make the sugared garnishes. Dip the cranberries and rosemary into some rosemary simple syrup then shake off the excess. Place some sugar in a small bowl then dip the wet cranberries and rosemary into the sugar. Set them aside on a parchment-lined plate to dry.

 

Christmimosas

Details

Prep Time: 5 Minutes
Serves: 8

Ingredients

  • 2  Granny Smith apples, chopped
  • 1 c. whole fresh cranberries
  • 1 c. green grapes, halved
  • 1 c. pomegranate seeds
  • 1 c. sparkling grape juice
  • 1 (750-ml.) bottle Champagne, Prosecco, or Cava

Directions

  1. In a large pitcher or punch bowl, combine apples, cranberries, grapes, and pomegranate seeds.
  2. Pour over sparkling grape juice and Champagne and stir well to serve.

 

Citrus Cheer

Details

Prep Time: 5 Minutes
Serves: 1

Ingredients

  • 2 ounces vodka
  • 1/2 ounce St. Germain (elderflower liquor)
  • 1/3 cup fresh squeezed clementine or blood orange juice
  • club soda, for topping
  • pomegranate seeds
  • 1 sprig fresh thyme or mint

Directions

  1. Fill a cocktail glass with ice.
  2. Add the vodka, elderflower liquor, and orange juice.
  3. Top with club soda.
  4. Add the pomegranates and thyme or mint.

 

Maple Cranberry Bourbon

Details

Prep Time: 8 Minutes
Serves: 6 cocktails

Ingredients

  • 4 ounces bourbon
  • 3 ounces cranberry juice
  • 2 ounces maple cranberry syrup
  • 2 ounces seltzer or club soda
  • Maple cranberries and rosemary sprigs for garnish

Maple Cranberries

  • 1/2 cup real maple syrup
  • 1 cup fresh cranberries

Directions

  1. Begin by preparing the maple cranberries and maple cranberry syrup. In a small saucepan, mix the real maple syrup and fresh cranberries. Simmer until the cranberries begin to burst, about 5 minutes. Remove from heat and cool completely. You will have enough maple cranberries and syrup to make 5-6 cocktails.
  2. Next, add ice to two rocks glasses. Top each with a tablespoon of the maple cranberries. Set aside.
  3. In a cocktail shaker filled with ice, add the bourbon, cranberry juice, and maple cranberry syrup. Shake vigorously.
  4. Strain into the prepared rocks glasses. Top each with a splash of seltzer or club soda.
  5. Garnish with a sprig of rosemary.

 

Muletide Spirit

Details

Prep Time: 5 Minutes
Serves: 1

Ingredients

  • 3 ounces vodka
  • 1/2 cup Ginger Beer
  • 2/3 cup Cranberry Juice
  • Juice of 1 lime
  • Rosemary Sprigs

Directions

  1. Chill a copper mug.
  2. Add crushed ice, cranberry juice, juice of 1 lime and 1 shot of vodka.
  3. Top with ginger beer
  4. Garnish with fresh cranberries, lime and rosemary sprigs.
