INGREDIENTS:

2 whole plum tomatoes, chopped

¼ cup onion, finely chopped

1 bunch fresh parsley, finely chopped
-
1 clove garlic, minced
-
½ tsp oregano
-
1 Tbsp olive oil
-
2 Tbsp red wine vinegar
-
4 oz plain crumbled feta cheese
-
2 whole avocados, diced
-
Salt and pepper to taste
INSTRUCTIONS:

Chop all ingredients listed for chopping: Tomatoes, onion and parsley.

In a medium sized bowl, combine all ingredients (except avocados) and sir with a spoon.

If not serving immediately, cover and refrigerate.

When ready to serve, dice avocados and stir in.

Serve with tortilla chips.
