In the Kitchen: Summer Avocado Dip

Serving: Appetizer for 4-6

INGREDIENTS:

• 2 whole plum tomatoes, chopped

• ¼ cup onion, finely chopped

• 1 bunch fresh parsley, finely chopped

• 1 clove garlic, minced

• ½ tsp oregano

• 1 Tbsp olive oil

• 2 Tbsp red wine vinegar

• 4 oz plain crumbled feta cheese

• 2 whole avocados, diced

• Salt and pepper to taste

INSTRUCTIONS:

1. Chop all ingredients listed for chopping: Tomatoes, onion and parsley.

2. In a medium sized bowl, combine all ingredients (except avocados) and sir with a spoon.

3. If not serving immediately, cover and refrigerate.

4. When ready to serve, dice avocados and stir in.

5. Serve with tortilla chips.

6. Enjoy!
